Potato salad with Enriched lemon

You need:

600 g new potatoes

1 cucumber, sliced

1/2 red onion, finely chopped

2 tablespoons capers, finely chopped

2.5 dl kesam

2 tsp mustard

2 handfuls of fresh herbs, parsley, dill or similar, coarsely chopped

4 eggs, boiled and peeled

salt and pepper to taste Enriched lemon

This is what you do:

  1. Wash and cook the potatoes tender in salted water. Pour off the water and steam the paws dry. Hard-boil the eggs.
  2. While the potatoes are cooking, divide the cucumber into slices, finely chop the red onion and capers and coarsely chop the herbs.
  3. Divide the potatoes into 2 or 4 and flip together with the red onion, cucumber, capers, sour cream, mustard and herbs. Season with salt and pepper.

Just before serving, pour over a little Enriched lemon
