Pasta with red pesto

A simple pasta dish with red pesto quickly becomes a family favorite! This red pesto is extra healthy with ENRICHED olive oil with omega-3 and basil flavor.

You need:

Red pesto

150 g sun-dried tomatoes

60 g grated parmesan

60 g pine nuts

2 cloves garlic, finely chopped

1 pot fresh basil

1-1.5 dl ENRICHED olive oil with basil

Salt and pepper to taste

400 g pasta

200 g cherry tomatoes, divided into 2

2 cloves garlic

100 g arugula

100 g fresh mozzarella

This is what you do:

  1. Start with the red pesto; Add sun-dried tomatoes, grated parmesan, pine nuts, finely chopped garlic and basil and beat to the desired consistency with a hand mixer. Season with salt and pepper. Finally, gently toss the pesto with ENRICHED olive oil with basil.
  1. Cook pasta according to the instructions on the package. While the pasta is cooking, place the whole garlic clove and tomatoes in a small saucepan. Let it simmer on low heat until the pasta is cooked through.
  1. Take out the garlic cloves and mix the tomatoes together with pasta, red pesto to taste, arugula and mozzarella. Transfer to a serving dish and top with more basil if you wish.
