A simple pasta dish with red pesto quickly becomes a family favorite! This red pesto is extra healthy with ENRICHED olive oil with omega-3 and basil flavor.
150 g sun-dried tomatoes
60 g grated parmesan
60 g pine nuts
2 cloves garlic, finely chopped
1 pot fresh basil
1-1.5 dl ENRICHED olive oil with basil
Salt and pepper to taste
400 g pasta
200 g cherry tomatoes, divided into 2
2 cloves garlic
100 g arugula
100 g fresh mozzarella
This is what you do:
- Start with the red pesto; Add sun-dried tomatoes, grated parmesan, pine nuts, finely chopped garlic and basil and beat to the desired consistency with a hand mixer. Season with salt and pepper. Finally, gently toss the pesto with ENRICHED olive oil with basil.
- Cook pasta according to the instructions on the package. While the pasta is cooking, place the whole garlic clove and tomatoes in a small saucepan. Let it simmer on low heat until the pasta is cooked through.
- Take out the garlic cloves and mix the tomatoes together with pasta, red pesto to taste, arugula and mozzarella. Transfer to a serving dish and top with more basil if you wish.
