Bruschetta with warm tomatos

You can eat bruschetta as an appetizer, small dish and go perfectly with tapas. These warm tomatoes can just as well be used as an accompaniment to dinner and especially to pasta dishes.

Top the bruschettas with ENRICHED extra virgin olive oil with omega-3. It is an easy way to add extra omega-3 to your daily diet. 1 teaspoon covers the daily requirement for normal heart, brain and eye health.

You need:

200 g cherry tomatoes, preferably yellow and red
2 tbsp rapeseed oil
3 cloves garlic
2 handfuls of rosemary and thyme
Salt and pepper to taste

Good bread
Ricotta
Garlic
0.5 dl ENRICHED Extra Virgin Olive oil with omega-3 with garlic flavor

This is what you do:

  1. Preheat the oven to 150 degrees
  2. Mix together tomatoes, rapeseed oil, garlic, salt and pepper. Place in a fireproof dish and place over crushed garlic cloves and herbs. Top with a little salt and pepper.
  3. Put in the oven and cook for about 20-30 minutes until the tomatoes have become soft and you have some cracks in the skin. While the tomatoes are in the oven, toast bread in a frying pan or grill pan. Rub in with a little garlic if you wish.
  4. Butter crispy bread slices with ricotta, warm tomatoes and ENRICHED with garlic flavor.
